Hi and Hello from my Home Office! I guess many out there do the same thing right now – working from home! Well.. let’s make the best out of that situation. Let’s have a nice slice of cheesecake. A nice Baklava Cheesecake with Nuts, Honey and a little bit of Ritter Sport chocolate – just enough to make the flavors of this cheesecake perfect ;) Does anybody want some?! When it comes to counting calories, you should probably not start counting with this cake. There are plenty of them involved in this Nutella Loaf Cake. Nutella in the dough and as decoration on top. A Nutella lovers dream come true! ;) If you are one of those who does not like this particular spread, you can replace it with something else of course… but then it’s not a Nutella Cake anymore which would be a bummer :P
I got some cookies for you today which I consider “healthier” than others. Sugar-free Pecan Cookies – good for your hips and your blood sugar level. Probably only better for the blood sugar level :P Well… not everybody has to think about but it won’t hurt, if you sometimes skip the sugar – that’s a fact ;)

Easter is over – let’s get back to business ;) I hope you had a good time and you could spend some nice days with your family or friends – of course, only within the allowed limits and restrictions. Don’t forget those 6 feet distance at the dinner table ;) Easter was very quiet for us this year, but I was able to bake a few things… which none of them will end up on this blog here ;) This delicious (Keto) Lemon Poppy Seed Bundt Cake here was made some time before Easter and did not survive until the weekend. Well… in case you still have problems organizing flour, you can try this cake here. No flour needed – almonds are used as a substitute here.
I got a fresh batch of cookies for you today with loads of stuff inside. As we all know – more is more! Oats, nuts, cranberries, and some white chocolate – I guess there is something for everyone in there. These cookies were definitely a hit in our house and gone in an instant ;)
These Cranberry Nut Oatmeal Cookies are probably not the most beautiful cookies in the world – I am honest with you – I have seen prettier ones. But the combination of the almonds, coconut, cranberries, oats, and chocolate is awesome! So good! You got something sweet, something soft, something crunchy… all at the same time with each bite you make.
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
