Many of you know our German “Angel Eyes” probably as “thumbprint cookies” – classic Christmas cookies all over the world. Usually, these cookies are quite bulky with a blob of jam on top. These Meringue Angel Eyes here are a little different. Instead of a ball of dough that got an indention to keep the jam filling, these cookies here are light and the jam filling is inside a ring of meringue. Similar, yet quite different ;P
Happy Cookie Friday! Easter is close so I got some cookies today that totally fit the theme: Easter Sandwich Cookies with Jam Filling. These delicious cookies are easy to prepare and done in no time at all – if you need a little snack or Easter gift, these “last minute” cookies are perfect and look really good in a cute little Easter basket next to the chocolate Easter bunny ;)
I was actually already done with all my Christmas cookies this year, but then I saw on a TV show how someone ate rugelach and I immediately had to get out a friend’s recipe and quickly bake me some Raspberry Rugelach. Whoever said that television has a bad influence on us… was absolutely right! Just kidding! ;P
Happy Cookie Friday! I hope you still like to see some cookies here on the blog… after all those years and hundreds of cookie recipes, I’ve already done ;) Even though my Cookie Friday started with classic American cookies and even though I really love those cookies with a soft center and a crunchy exterior – here and there I like to do different types of cookies. Something crunchy with a sweet marmalade filling, for example: Oatmeal Spelt Jammies! They are delicious!!
Here in Germany, we have some bakes and sweets that have kind of weird names – even for us Germans ;) People eat things like “Liebesknochen” aka. Lovebones or “Schweineohren” aka. Pigs Ears (that is something sweet, not actual ears from pigs) or “Katzenzungen” aka. Cat Tongues (yeah I know… weird). The name of today’s “Christmas Cookie Friday” cookies can easily be put into the same category of weirdness: Engelsaugen aka. Angel Eyes. In general a nice name, but when you look at the cookies and imagine angels with that kind of red eyes?! Oh boy… ;)
Here in Germany Peanut Butter & Jelly Sandwiches are not that common – unlike the U.S. ;) As far as I know, kids in America grow up only eating PB&J sandwiches… just kidding! But I heard they are quite popular. Probably like our “Käsebrot” ;) Well… maybe one day the mix of sweet and salty will find it’s way into German kitchens. I like it a lot – that’s why I made this little fella here: a tiny little Peanut Butter & Jelly Sandwich Cake! ;)
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
