We love salads (not only) in the summer! A simple Caesar Chicken Salad is one of our favorites here – whether it’s for lunch, dinner, or as a side dish for a barbecue in the garden or park. This classic American salad is extremely delicious and, surprisingly, quite easy to prepare. It never hurts if it doesn’t take too long to get the food on the table, right?! ;P
They are absolute classics here in Germany – Braised Cucumbers with Meatballs were always a favorite of our grandma. Nowadays, they may not be quite as hip and trendy as other dishes, but we really like braised cucumbers in a creamy sauce with some meatballs on the side. Childhood memories. And yes, me, the person writing this article here, is a little older. ;P
We love Asian cuisine – that’s probably because we like everything a little spicier. Let’s just say that slightly »hotter« dishes are not uncommon in Asia, right?! ;) This delicious Korean Cucumber Salad (with Gochugaru) also packs a punch… if you’re not careful with the chili flakes, aka. Gochugaru. If you like it tasty and spicy, you should definitely make this recipe!
In summer, we eat salad very often. Almost every evening, to be honest. It’s simply the best dinner when the temperatures are a bit more challenging… and it tends to get quite warm in the attic where we live. Pasta salad may not necessarily be the best option here, but this Caesar Chicken Pasta Salad is an exception, because the ratio of pasta to veggies is very balanced. So is the salad healthy? Hmmm… good question. ;P
In summer, we prefer lighter meals. We live in the »attic« of our house and that apartment can get very hot. Those lighter meals are usually quick and easy to prepare and don’t weigh heavily on the stomach when trying to fall asleep when it’s still hot at night. In an apartment without air conditioning, this is very important! ;P Salads are pretty much the standard for us in summer. One of our favorite salads is our Couscous Salad with Tomatoes, Cucumber & Za’atar. Light, refreshing, healthy, and really delicious! The perfect easy dinner in summer!
When it’s hot outside (and hot inside the apartment), we rarely cook. This does not mean we are not eating anything, but choosing foods that are easier to prepare and easier to digest is the name of the game in summer. This means salads are our preferred meals in summer. Something like this delicious Roasted Chickpea, Tomato & Feta Salad with Za’atar. Easy to prepare, healthy, and really tasty! What more could you want?!
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
