Description

These are delicious and addictive savory cookies with parmesan cheese and thyme. THE perfect snack for a relaxed evening on the couch!


Ingredients

1/2 cup (120g) butter, at room temperature
3 oz. (90g) grated parmesan cheese
1 cup (130g) all-purpose flour
1 tsp. fresh thyme, chopped
1/4 tsp. ground pepper
1/4 tsp. salt

grated parmesan cheese for sprinkling


Instructions

1. Add the butter to a large bowl and mix until light and fluffy. Mix the parmesan with flour, thyme, pepper, and salt. Add to the bowl and mix until just combined. Form into a log and wrap in plastic wrap. Place in the freezer for about 30 minutes or in the fridge for an hour.

2. Preheat the oven to 180°C (350°F). Line a baking sheet with baking parchment. Cut the dough log into slices and place them with enough space in between on the baking sheet. Sprinkle with some parmesan cheese and bake for about 16-18 minutes until nice and golden brown. Take out of the oven and let cool down no the baking sheet for some time, then transfer to a wire rack and let cool down completely.
