Description

If you want to surprise a loved one for Valentine’s Day, make these cute little Heart Cookies!


Ingredients

1/2 cup (120g) butter, at room temperature
1/2 cup (100g) sugar
1 medium egg
1 tsp. vanilla extract
2 cups (260g) all-purpose flour
1/3 cup (40g) cornstarch
1/4 tsp. salt
few drops pink food color
12 tbsp. pink sanding sugar*


Instructions

1. Add the butter and sugar to a large bowl and mix until light and fluffy. Add the egg and vanilla extract and mix until well combined. Mix the flour with cornstarch and salt and add to the bowl – mix until just combined. Take about 2/3 of the dough out, shape into a ball, flatten and wrap in plastic wrap. Place in the fridge. Add some drops of pink food color to the remaining dough in the bowl and mix on low until the dough is evenly colored. Adjust the color with some more food color if necessary. Wrap in plastic wrap as well and place in the fridge with the other dough for about 30-40 minutes.

2. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside. Roll out the pink dough on a floured surface to a thickness of about 0.2 inches (0,5cm), sprinkle evenly with the pink sanding sugar, and press that sugar lightly into the surface of the dough. Use a small heart cookie cutter* and cut out as many hearts as possible. You can collect the leftover dough and roll it out again, sprinkle with some more sanding sugar and cut out more hearts. Set aside.

3. Roll out the light dough with the same thickness as the pink dough and cut out hearts with the same small cookie cutter you used for the pink dough. You can do that randomly or create a pattern with the hearts. Press the pink hearts into the openings you created in the light dough. If pink sanding sugar ended up on the light dough, you can remove it with a brush. Cover everything with a large piece of plastic wrap. Use the rolling pin and roll over the dough to press everything slightly together – do not use too much pressure or you will deform the hearts. Now use a larger heart cookie cutter* and cut out heart cookies from the dough layer. Transfer to the prepared baking sheet. There will be quite a bit of leftover dough – you can collect everything and roll it out again to create marbled cookies. Bake for about 10 minutes – the cookies should be firm but should not get much color. Take out of the oven and let cool down on a wire rack. Repeat with more hearts you cut out.


Notes

You can easily make colored sugar. Just mix regular sugar with some drops of food color, mix well, and let dry again.
