Description

Traveling makes us always hungry – luckily you can always take these delicious Smoked Tofu & Avocado Sandwiches with you. The perfect travel snack/meal!


Ingredients

Scale

For the sauce:
1-2 sun-dried tomato(es), minced
1/4 cup (60g) sour cream
some smoked paprika powder*
salt, pepper

For the sandwiches:
some oil for frying
3.5 oz. (100g) smoked tofu*, sliced
4 large slices of bread
some salad leaves
2 tomatoes, sliced
1/2 avocado, sliced
some Sriracha sauce* (or any other hot chili sauce)


Instructions

1. Mince the sun-dried tomato(es) for the sauce finely. Combine with the sour cream in a small bowl and season with paprika powder, salt, and pepper to your liking. Set aside.

2. Heat up a frying pan with some oil. Cut the smoked tofu into (not too thick) slices and fry until nicely browned on all sides. Remove from the frying pan and let it drain on some kitchen paper to get rid of some of the oil.

3. Spread the sauce on all four slices of bread, add some lettuce on top of two of the slices of bread and top the salad with tomato and tofu. Drizzle everything with Sriracha sauce to your liking, then place the avocado slices on top (if you like, you can add some extra lettuce as well) and close the sandwiches with the two slices of bread that only have the sauce on them. Wrap the sandwiches in greaseproof paper, secure with string if necessary, and cut each one in half. Enjoy!
