Popsicles with Skyr

Ingredients

  • 600g Skyr (I used 2 cups each of Arla Skyr with apricot/sea buckthorn and blueberry/elderberry)
  • 1 tsp. vanilla paste or honey (optinal)
  • some fresh fruits and berries (e.g. blueberries, strawberries, apricots, kiwi)
  • 46 tbsp. granola
  • 12 tbsp. honey

Instructions

  1. Wash the fruits/berries and cut into small pieces. If you are using regular Skyr, you can mix it with the vanilla paste to get a flavored vanilla skyr or mix it with honey (optional). If you are using the skyr with fruit filling, I recommend to take off the skyr part from the cups first – the fruit layer is normally on the bottom. Try not to touch that fruit layer, so you get some “pure” skyr ;) Fill that skyr into the popsicle mold first – each about 1/3 full. Then add some cut fruits – I used kiwi, strawberry and apricot for the ones with apricot/sea buckthorn skyr and blueberries for the popsicles with blueberry/elderberry skyr. Mix the remaining skyr with the fruit filling and add on top of the matching fruits/berries. Add some more fruits/berries if there is space – the molds should be about 3/4 full. Top with the granola and press slightly into the filling. Drizzle the honey over the granola, so it sticks together. Push wooden sticks into the filling and freeze for at least 6 hours, better over night. To get the popsicles out of the mold easily, let some warm water run over the mold.
