Description
Delicious and (almost) healthy peanut butter cookies with cocoa nibs – quick and easy to prepare. The perfect snack you can enjoy throughout the day.
Ingredients
1 cup (250g) peanut butter*
1/2 cup (60g) coconut blossom sugar*
1 large egg
2 tbsp. cocoa nibs*
Instructions
1. Preheat the oven to 180°C (350°F). Line a baking sheet with baking parchment and set aside.
2. Add the peanut butter, coconut sugar, egg, and cocoa nibs to a bowl and mix until well combined. Form 12 balls, place them on the baking sheet and flatten them lightly. Use a fork to press a cross pattern into the top of the cookies and bake for 10-12 minutes. Take them out of the oven and let them cool down on the sheet.
