A delicious banana bread made with coconut flour and almond butter – no flour, no sugar, no gluten. Kind of healthy you could say…
Ingredients
3 medium bananas (very ripe)
3 medium eggs
1/3 cup (80g) almond butter*
1/4 cup (50g) coconut oil*, melted
1/2 cup (60g) coconut flour*
1/3 cup (20g) oat bran*
2 tsp. baking powder
1 tsp. ground cinnamon*
1/4 tsp. salt
2/3 cup (85g) walnuts*, chopped (plus some more)
Instructions
1. Preheat the oven to 180°C (350°F). Grease and line a 23cm loaf tin* with baking parchment. Set aside. Chop the walnuts coarsely and set aside.
2. Add the bananas to a large bowl and mash with a fork until smooth. Add the eggs and mix until combined. Next, add the almond butter and melted coconut oil and mix in. Mix the coconut flour, oat bran, baking powder, cinnamon, and salt in a second bowl. Add to the large bowl and mix until well combined. Add the chopped walnuts and fold in. Transfer the batter to the prepared baking pan and smooth out the top – sprinkle with some chopped walnuts.
3. Bake the banana bread for about 50 minutes or until a wooden skewer inserted into the center comes out clean. Take out of the oven and let cool down in the pan. Store well wrapped in a cool place. Slices can be frozen individually.
