Easy Sugar Free Upside Down Apple Cake (Vegan)

Delicious and easy apple cake without any refined sugar. The sweetness comes only from the apples – great if you want to cut back on sugar ;)



3 medium sized apples
3.5 oz. (100g) wholemeal wheat flour
3.5 oz. (100g) spelt flour
2 tsp. baking powder
1.7 oz. (50g) ground almonds
1 tsp. ground cinnamon
pinch of cardamom
pinch of salt
2/3 cup (160ml) cashew milk
5.3 oz. (150g) apple sauce
1 tbsp. vegetable oil
1 tsp. vanilla extract
1 oz. (30g) walnuts, chopped


1. Preheat the oven to 350°F (175°C). Line a 8 inches springform tin with baking parchment and set aside. Peel the apples, quarter and remove the core, cut one apple into thin slices and the rest into dices. To prevent them from browning, you can drizzle some lemon juice on top. Chop the walnuts and set aside.
2. Add the flours, baking powder, ground almonds, cinnamon, and salt to a large bowl and mix until well combined. Mix the cashew milk, apple sauce, oil, and vanilla extract in a second bowl until combined, then pour into the bowl with the flour and mix until just combined. Add the diced apples and chopped walnuts and fold in. Place the apple slices on the base of the prepared springform tin (any type of pattern you like) and carefully spread the batter on top (try not to move the slices) and smooth out. Bake in the middle of the oven for about 40-45 minutes or until a wooden skewer inserted into the center comes out clean. Take out of the oven and let cool down a bit in the baking tin, then turn upside down and remove from the form. Let cool down completely. Serve with some whipped cream, vanilla sauce or vanilla ice cream.
