Simple and easy cookies baked without any added sugar: Easy Oats Cookies. A delicious and guilt-free snack for the whole family.
Ingredients
1 large egg
2 tbsp. xylitol*
1/2 tsp. vanilla extract
3.5 oz. (100g) whole grain rolled oats
1.8 oz. (50g) quick oats
1.4 oz. (40g) desiccated coconut
2 tbsp. all-purpose flour
3 oz. (85g) margarine, melted
Instructions
1. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside.
2. Add the egg, sugar, and vanilla extract to a large bowl and mix on high until light and fluffy – takes about 3-4 minutes. Combine oats, desiccated coconut, and flour in a second bowl. Add the melted margarine to that bowl and mix until well combined. Transfer the mix to the large bowl and fold in. Let the dough sit for about 5 minutes.
3. Using a Cookie Scoop* place portions of the dough on the prepared baking sheet, flatten them slightly with wet fingers, then bake for about 15 minutes. Take out of the oven and let cool down on a wire rack.
