Vegan Orange Cookies (Portakallı kurabiye)

Description

One of my favorite bake from the Turkish bakery in my neighborhood: Vegan Orange Cookies (Portakallı kurabiye)! Big, crumbly, and super orangy ;)


Ingredients

Scale

1 3/4 cups (230g) all-purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1 pinch of salt
1/4 cup (60g) vegan butter (margarine), at room temperature
1/4 cup (50g) sugar (or xylitol)
zest of 1 organic orange
1/4 cup (60ml) fresh orange juice
2 tbsp. oat milk

some coarse (brown) sugar


Instructions

1. Mix the flour with baking powder, baking soda, and a pinch of salt and set aside.

2. Add the soft vegan butter and sugar (or xylitol) to a bowl and mix until light and fluffy. Next, add the orange zest, orange juice, and oat milk and mix to combine – the liquid will not mix well with the butter, but that is ok. Add the flour mixture and mix in. You will get a pretty sturdy dough. Shape into 8 balls. Place the dough balls on a cutting board (lined with some baking parchment), cover loosely with plastic wrap, and place in the fridge for about 1 hour.

3. Preheat the oven to 375°F (190°C). Line a baking sheet with baking parchment. Press the cookies into some coarse (brown) sugar, so they are covered with it all around. Place them with some space in between on the baking sheet. Use a sharp knife or razor blade and cut crosses into the top of the dough balls and bake for about 20 minutes until puffed up and slightly golden. Take out of the oven and let cool down for some time on the baking sheet, then transfer to a wire rack and let cool down completely.

Tip: To get even more orange flavor into the cookies you can add several drops of orange oil to the dough. Not too much though or it will taste artificial ;P
