Description
The perfect cookies for fall: delicious Pumpkin Cookies with a sweet Maple Syrup Frosting. They are thick and sweet – perfect for the colder season!
Ingredients
For the dough:
1/2 cup (120g) butter
1/2 cup (100g) brown sugar*
1 medium egg
1/2 cup (120g) pumpkin puree
1 tsp. vanilla extract*
1 1/2 cups (200g) stronger all-purpose flour*
1 tsp. pumpkin pie spice
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
For the frosting:
1/3 cup (80g) butter, softened
2/3 cup (85g) confectioners‘ sugar*
1/2 tsp. vanilla extract*
1-2 tbsp. maple syrup*
1-2 tsp. milk (optional)
some pumpkin pie spice for sprinkling
Instructions
1. Preheat the oven to 180°C (350°F). Line a baking sheet with baking parchment and set aside.
2. Add the butter and brown sugar to a large bowl and mix until light and fluffy. Add the egg and mix until well combined. Next, add the pumpkin puree and vanilla extract and mix in. Mix the flour with pumpkin pie spice, baking powder, baking soda, and salt and add to the bowl – mix until just combined. Use a cookie scoop* or tablespoons and place dough portions with some space in between on the baking sheet. Bake for about 12-13 minutes or until the cookies are set. Take out of the oven and let cool down completely on a wire rack. Repeat with the remaining dough.
3. For the frosting, add the butter and confectioners‘ sugar to a large bowl and mix until light and fluffy. Add the vanilla extract and mix it in. Next, add a tablespoon of the maple syrup and mix it in. Add more to your liking. If the frosting is too thick to spread, add some milk and mix it in. Frost the cookies, sprinkle with some pumpkin pie spice. Store in a cool place.
