Delicious vegan Christmas cookies with loads of hazelnuts.
Ingredients

- 3.5 oz. (100g) margarine
- 1/4 cup (50g) brown sugar
- 1 cup (130g) all-purpose flour
- 1 cup (90g) ground hazelnuts
- 2 tsp. hazelnut liquor (optional)
- about 20 thin round wafers (oblate), about Ø 2 inches
- about 20 whole hazelnuts
Instructions
- Preheat the oven to 340°F (170°C). Line a baking sheet with baking parchment and set aside. Add the margarine and brown sugar to a large bowl and mix on high speed until light and fluffy. Mix the flour with the ground hazelnuts and add together with the liquor (optional) to the bowl. Mix until well combined.
- Use a small cookie scoop or teaspoons and place small dough portions on the wafers, place a whole hazelnut on each dough portion and place on the baking sheet. Bake for about 10 minutes. Take out of the oven and let cool down on a wire rack.
