Olive Oil Cake with Red Grapes

Ingredients

  • 1 cup (240g) Greek yogurt
  • 1/2 cup (120ml) olive oil
  • 2 tbsp. honey
  • 3 eggs
  • 1 organic lemon (zest and juice)
  • 1/2 cup (100g) sugar
  • 1 1/4 cups (160g) all-purpose flour
  • 3/4 cup (70g) ground almonds
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 911 oz. (250-300g) seedless red grapes

Instructions

  1. Preheat the oven to 350˚F (175°C). Grease a 10 inch (26cm) tart tin and set aside. Wash the grapes, remove green parts dry.
  2. In a mixing bowl combine the yoghurt, olive oil, honey, eggs, zest of the lemon and juice. In a second bowl mix sugar, flour, ground almonds, baking powder and salt until well combined. Add the dry ingredients to the mixing bowl and mix until just combined – do not overmix! Transfer to the tart tin and place the grapes on top. Bake for 24-30 minutes or until toothpick inserted in center comes out clean. Let cool down on a wire rack, dust with confectioner’s sugar if you like and serve with some whipped cream.
