Description

A simple and easy summer salad that is done in no time: Watermelon & Cucumber Salad with Feta. So easy and so good!


Ingredients

Scale

about 42 oz. (1.2 kg) watermelon (seedless), diced
1/2 cucumber, peeled & diced
1 small red onion, in wedges
2 tbsp. olive oil
1 1/2 tbsp. white balsamic vinegar
salt, pepper

7 oz. (200g) feta cheese (or shepherd’s cheese), crumbled
some pistachios, chopped (optional)


Instructions

1. Cut the watermelon into wedges, remove the peel and then cut it into small cubes. Peel the cucumber and cut it into cubes as well. Peel the onion and cut it into wedges. Add to a large bowl and mix to combine.

2. Mix the olive oil and vinegar in a small bowl. Season with salt and pepper and add to the large bowl – mix well. Crumble the feta and sprinkle over the salad. Sprinkle with some chopped pistachios as well (optional) and serve.
