Ice Cream Sandwich Cookies

Ingredients

  • 12.3 oz. (350g) semi-sweet chocolate
  • 2 eggs
  • 1.4 oz. (40g) butter
  • 5.3 oz. (150g) confectioner’s sugar
  • 1 TL vanilla bean paste
  • 1.4 oz. (40g) all-purpose flour
  • 1/2 tsp. baking powder
  • vanilla ice cream

Instructions

  1. Preheat the oven to 350˚F (180°C). Line a baking sheet with baking parchment and set aside.
  2. Melt the chocolate in a heatproof bowl over a pot with simmering water. Let cool down again. Add the eggs and butter to a large bowl and mix until well combined. Sift the confectioner’s sugar on top, add the vanilla bean paste and mix. Combine flour and baking powder and fold in. Add the melted chocolate and fold in as well. Place small portions (size of a tablespoon) of dough on the baking sheet – make sure there is enough space in between. Bake for about 10 minutes, take out and transfer to a wooden board – be very careful – the cookies break easily.
  3. Cut some vanilla ice cream into slices and cut out circles in the size of the cookies – or just scoop it onto one cookie and cover with a second cookie… enjoy.
