Delicious and easy to prepare almond cookies – flavorful and chewy on the inside ;)
2 cups (200g) almond flour
1/2 tsp. baking powder
1/3 cup (100g) maple syrup
1 tsp. vanilla extract
some drops of almond extract
1/4 cup (20g) sliced almonds
1. Preheat the oven to 325°F (160°C). Line a baking sheet with baking parchment and set aside.
2. Add the almond flour and baking powder to a bowl and mix to combine. Add the maple syrup, vanilla extract, and almond extract and mix until a dough starts coming together. Add the sliced almonds and fold in. Use a cookie scoop or tablespoons and place 8 dough portions on the baking sheet, flatten them a bit and bake for 14-16 minutes or until lightly golden in color. Take out of the oven and let cool down completely on a wire rack.
