Coffee House Cakes – Cinnamon Swirl Cake

Delicious loaf cake with loads of cinnamon. Perfect along a nice cup of coffee :)



For the batter

  • 1/2 cup (100g) sugar
  • 1 large egg
  • 2 tsp. vanilla extract
  • 1/3 cup (80g) sour cream
  • 1 cup (240ml) milk
  • 2 cups (260g) all-purpose flour
  • 1 tbsp. baking powder
  • 1/2 tsp. salt

For the filling

  • 2 tbsp. butter, melted
  • 3 tsp. ground cinnamon
  • 1/3 cup (65g) brown sugar

For the glaze

  • 3/4 cup (100g) confectioners’ sugar
  • 23 tsp. heavy cream
  • 1/2 tsp. ground cinnamon


  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×5 inches (23x13cm) loaf pan or line with baking parchment. Set aside.
  2. Add the sugar and egg to a large bowl and mix until creamy. Add the vanilla extract, sour cream and milk and mix in. Mix the flour with baking powder and salt and add to the bowl, mix until combined. Pour the batter into the prepared loaf pan and set aside.
  3. Melt the butter for the filling and mix with the cinnamon and sugar. Drizzle on top of the batter and then lightly mix with the batter. Place in the oven and bake for 45-50 minutes or until a skewer inserted to the center comes out clean. Take out of the oven and let cool down in the pan for some time, then remove and let cool down completely on a wire rack.
  4. For the glaze add the confectioners’ sugar to a small bowl and gradually add the heavy cream until you get a nice and thick glaze. Drizzle about half of the glaze on top of the bread and let dry a bit. Add the ground cinnamon to the remaining glaze and mix, then drizzle as well over the bread. Let dry.
