Description

Delicious and soft chocolate chip cookies without any refined sugar or white flour – which means they are diabetes-friendly and also keto-friendly.


Ingredients

Scale

1/2 cup (120g) butter, softened
1/4 cup (50g) xylitol*
2 medium eggs
1 tsp. vanilla extract (sugar-free)*
7 oz. (200g) almond flour*
1/2 tsp. baking soda
3.5 oz. (100g) semi-sweet chocolate (sugar-free)*, chopped


Instructions

1. Preheat oven to 180°C (350°F). Line a baking sheet with baking parchment and set aside. Chop the chocolate and set it aside.

2. Add the butter and xylitol to a large bowl and mix until well combined. Add the eggs one at a time and mix well after each addition. Next, add the vanilla extract and mix it in. Mix the almond flour with baking powder and add to the bowl. Mix until just combined. Add the chopped chocolate and fold it in. Use a small cookie scoop or tablespoons and place small portions of dough with some space in between on the baking sheet. Bake for 14-15 minutes. Take out of the oven and let cool down a bit on the baking sheet, then transfer to a wire rack and let cool down completely. Repeat with the remaining dough.
