- 1/2 cup (120ml) apple sauce
- 1 1/2 tbsp. chia flour
- 1/2 tbsp. locust bean gum
- 1 tbsp. vinegar
- 1/4 tsp. salt
- 1/4 cup (40g) coconut blossom sugar
- 1/4 cup (60ml) coconut oil
- 1 cup (150g) rice flour
- 1.75 oz. (50g) cornstarch
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/4 cup (20g) cocoa nibs
Instructions
- Preheat the oven to 350˚F (180°C). In a large bowl mix all ingredients until well combined. Add more rice flour if the dough is too sticky.
- Make small balls of dough with the help of a spoon or with your hands, flatten them and place on a baking sheet lined with baking parchment. Bake for 10-12 minutes.
