The UK and Ireland are not necessarily known for their »haute cuisine« or a lot of dishes that are cooked all over the world. France, Italy, or Spain are a bit more popular in that area. No offense! ;P Nonetheless, there are, of course, dishes in the UK/Ireland that are really delicious. Bangers ‘n’ Mash, for example. Or a simple and delicious Cottage Pie! Both dishes are really great and also very filling…
Recipes for chocolate chip cookies are a dime a dozen, right? There are already countless recipes for those cookies here on the blog. All these chocolate chip cookies are based on the same idea, but always a bit different. Same same, but different, right?! ;) These Double Chocolate Chip Cookies are not only made with two different types of chocolate, but also with browned butter. Something that makes these cookies particularly delicious!
Thanks to the Olympics ’24, the good old chocolate muffin has gone viral for some time and has fully embraced its 15 minutes of fame. However, that’s not the reason why I love baking these Double Chocolate Zucchini Muffins so much – they have a lot of loyal fans here for a quite a while already. As soon as these muffins come out of the oven, you have to be careful… they might disappear instantly ;P
Pre-cooked pasta from the supermarket can save you a lot of work and time when cooking. I don’t see it as »cheating« when using it in a recipe. Why not make things a little easier for yourself if you can? You don’t have to spend hours in the kitchen preparing pasta dough plus filling to make these delicious Ravioli in Creamy Tomato & Spinach Sauce. You can simply use a good product from the supermarket and have a delicious dinner on the table in no time at all!
There are classics you make over and over again. This Brioche & Apple Casserole (aka. Ofenschlupfer) belongs in this category for me. Even though we make it over and over again, the recipe is being adapted from time to time. Instead of the usual stale bread rolls, I used brioche this time. The texture is a bit different, but I think it tastes even better than the original version ;P
Everyone has probably seen these long, thin, purple eggplants in the produce section of a supermarket. They are usually right next to the »regular« somewhat chubby-looking eggplants. These eggplants are called Japanese eggplants, but sometimes they are also called Chinese eggplants. Dunno why. Here I am using them for a Korean dish to add another Asian country into the mix: Gochujang Eggplant with Rice. An absolute delicacy!
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
