When I look at those pictures, I wished it was summer already – nice and hot outside and then these Ice Cream Sandwich Cookies to cool down?! What could be better? But of course I would eat them now too – just turn up the heat on the a/c and all is fine :P Happy Cookie Friday!
I have the honors again to welcome a lovely guest on my blog – Tanja from the blog “Frau Zuckerstein” brought me some delicious looking Ice Cream Sandwich Cookies for the Cookie Friday. When I look at those pictures I immediately feel the urge to grab some cookies and ice cream and start making me a nice sandwich!
Before I let Tanja take over, hop over to her blog – she has a lot of nice stuff – cakes, cookies, cupcakes, everything! Look for the frozen bananas – they are soooo cute :))
Jihaaa… heute ist wieder “Cookie Friday” bei Marc und ich darf mit dabei sein.
Ich bin Tanja, mittlerweile gestandene 30 Jahre alt, Vollblutmama von zwei kleinen Jungs. Ich blogge auf meinem kleinen Blog “Frau Zuckerstein” über leckere Sachen, die in unserer Küche entstehen. Ich backe niemals alleine, neben mir steht immer ein Stuhl. Darauf, der kleine Herr Zuckerstein, mit einer viel zu großen Schürze und einem Dutt im Haar, damit nicht ganz soviel Teig in den Haaren kleben bleibt. Der neue mini-Mann in unserer Familie hängt beim Backen meist in meiner Bauchtrage herum. Er räumt nebenbei auch schon mal die Schränke aus, oder versucht meine Keksausstechersammlung zu sortieren. Wir sind ein kleines Familien-Back-Team, dass das Chaos beherscht und dem so Allerlei in der Küche passiert.
Aber jetzt kommen wir mal zu meinen Cookies. Um die dreht sich ja heute alles. Ich habe lange hin und her überlegt und habe mich dann für Icecream Sandwich-Cookies entschieden. Oh la la… die hauen einem fast die Schuhe von den Füssen. Die Cookies schmecken sehr schokoladig und sind wohl die weichesten Cookies auf Erden. Bevor man in sie hineinbeißt, zerfallen sie einem schon im Mund… und da Eiscreme natürlich eh immer geht, hab ich daraus… zack zack mal schnell leckere Icrecream Sandwiches gezaubert.
Also… ran an die Schüsseln und viel Spaß beim Nachbacken…

INGREDIENTS / ZUTATEN
2 eggs
1.4 oz. (40g) butter
5.3 oz. (150g) confectioner’s sugar
1 TL vanilla bean paste
1.4 oz. (40g) all-purpose flour
1/2 tsp. baking powder
vanilla ice cream
2 Eier (von glücklichen Hühnern)
40g Butter
150g Puderzucker
1 TL Vanillepaste
40g Mehl
1/2 TL Backpulver
Vanille Eiscreme
DIRECTIONS / ZUBEREITUNG
2. Melt the chocolate in a heatproof bowl over a pot with simmering water. Let cool down again. Add the eggs and butter to a large bowl and mix until well combined. Sift the confectioner’s sugar on top, add the vanilla bean paste and mix. Combine flour and baking powder and fold in. Add the melted chocolate and fold in as well. Place small portions (size of a tablespoon) of dough on the baking sheet – make sure there is enough space in between. Bake for about 10 minutes, take out and transfer to a wooden board – be very careful – the cookies break easily.
3. Cut some vanilla ice cream into slices and cut out circles in the size of the cookies – or just scoop it onto one cookie and cover with a second cookie… enjoy.
2. Die Zartbitterschokolade über einem Wasserbad zum schmelzen bringen und wieder abkühlen lassen. Die Eier in eine Schüssel geben und mit der Butter gut verrühren. Den Puderzucker darüber sieben, die Vanillepaste dazugeben und verrühren. Das Mehl mit dem Backpulver vermischen und vorsichtig unterheben. Die abgekühlte Schokolade dazugeben und unterrühren. Den Teig mit einem Esslöffel auf dem Backblech verteilen – ein Esslöffel ergibt einen Cookie. Die Cookies brauchen etwas Platz zum Aufgehen. Die Cookies für ca. 10 Minuten backen lassen. Die Cookies sehr, sehr vorsichtig mit einem Teigschaber vom Blech heben und zum Abkühlen auf ein Holzbrett legen. Vorsicht, sie sind sehr zerbrechlich.
3. Das Vanilleeis in Scheiben schneiden und daraus mit einem Glas kleine Kreise ausstechen. Man kann auch einfach einen Esslöffel nehmen und das Eis herauslöffeln. Eine Eisscheibe zwischen zwei Cookies legen… genießen.
